- 1 lb Ground Beef
- 1 can Canned Beans (Black or Pinto)
- 1 cup Sweet Corn
- 2 Ripe Tomatoes, diced
- 1 cup Cheese (Cheddar or your choice)
- 1 tbsp Chili Powder
- 1 tsp Cumin
- ¼ cup Fresh Cilantro, chopped
- 2 cups Tortilla Chips, crushed
- 1 Salad (for serving)
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the ground beef in a skillet over medium heat until browned; drain excess fat.
- Stir in beans, corn, tomatoes, and spices, mixing well, then simmer for a couple of minutes.
- Transfer the mixture to a baking dish, spreading it out evenly.
- Top with cheese, sprinkling generously across the surface.
- Bake for 25-30 minutes until the cheese is melted and golden brown.
- Garnish with fresh cilantro before serving.
- Serve with tortilla chips or a fresh salad.
Notes
This casserole can be prepared in advance and stored in the refrigerator. Add a few extra minutes to the baking time if it’s cold from the fridge.
