Description

A hearty and comforting Baked Cowboy Casserole filled with ground beef, beans, sweet corn, and topped with melted cheese, perfect for family dinners or potlucks.


Ingredients

  • 1 lb Ground Beef
  • 1 can Canned Beans (Black or Pinto)
  • 1 cup Sweet Corn
  • 2 Ripe Tomatoes, diced
  • 1 cup Cheese (Cheddar or your choice)
  • 1 tbsp Chili Powder
  • 1 tsp Cumin
  • ¼ cup Fresh Cilantro, chopped
  • 2 cups Tortilla Chips, crushed
  • 1 Salad (for serving)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the ground beef in a skillet over medium heat until browned; drain excess fat.
  3. Stir in beans, corn, tomatoes, and spices, mixing well, then simmer for a couple of minutes.
  4. Transfer the mixture to a baking dish, spreading it out evenly.
  5. Top with cheese, sprinkling generously across the surface.
  6. Bake for 25-30 minutes until the cheese is melted and golden brown.
  7. Garnish with fresh cilantro before serving.
  8. Serve with tortilla chips or a fresh salad.

Notes

This casserole can be prepared in advance and stored in the refrigerator. Add a few extra minutes to the baking time if it’s cold from the fridge.
