A colorful and flavorful bowl featuring perfectly cooked chicken, fresh vegetables, and a creamy, spicy Bang Bang sauce.

- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup mayonnaise
- 3 tbsp sweet chili sauce
- 1–2 tsp sriracha (adjust to taste)
- 1 tsp honey (optional)
- 1 clove garlic, minced
- 2 cups cooked white or brown rice
- 1 cup shredded carrots
- 1 cup cucumber, thinly sliced
- 1 cup red cabbage, shredded
- 2 green onions, sliced
- Sesame seeds (optional, for garnish)
- Fresh cilantro (optional, for garnish)
Instructions
- Heat olive oil in a skillet over medium heat.
- Season the cut chicken pieces with salt and pepper.
- Cook the chicken in the skillet for 6–8 minutes, turning halfway until golden and cooked through.
- In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and minced garlic.
- Once the chicken is cooked, drizzle half of the sauce over it and toss to coat.
- In a bowl, layer the rice, then top with chicken, shredded carrots, cucumber, red cabbage, and green onions.
- Drizzle with the remaining sauce and garnish with sesame seeds and fresh cilantro.
- Serve immediately.
Notes
Feel free to customize with tofu instead of chicken or quinoa instead of rice for a different twist. The Bang Bang sauce can be made ahead for convenience.
