Description

A colorful and flavorful bowl featuring perfectly cooked chicken, fresh vegetables, and a creamy, spicy Bang Bang sauce.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup mayonnaise
  • 3 tbsp sweet chili sauce
  • 12 tsp sriracha (adjust to taste)
  • 1 tsp honey (optional)
  • 1 clove garlic, minced
  • 2 cups cooked white or brown rice
  • 1 cup shredded carrots
  • 1 cup cucumber, thinly sliced
  • 1 cup red cabbage, shredded
  • 2 green onions, sliced
  • Sesame seeds (optional, for garnish)
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the cut chicken pieces with salt and pepper.
  3. Cook the chicken in the skillet for 6–8 minutes, turning halfway until golden and cooked through.
  4. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and minced garlic.
  5. Once the chicken is cooked, drizzle half of the sauce over it and toss to coat.
  6. In a bowl, layer the rice, then top with chicken, shredded carrots, cucumber, red cabbage, and green onions.
  7. Drizzle with the remaining sauce and garnish with sesame seeds and fresh cilantro.
  8. Serve immediately.

Notes

Feel free to customize with tofu instead of chicken or quinoa instead of rice for a different twist. The Bang Bang sauce can be made ahead for convenience.
