- 1 cup cooked chicken, chopped
- 2 eggs, beaten
- 1 cup mixed vegetables (bell peppers, peas, carrots)
- 2 tablespoons vegetable oil
- 3 tablespoons bang bang sauce
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat oil in a large pan over medium heat.
- Add the mixed vegetables and cook until slightly tender.
- Push the veggies to one side of the pan and pour in the beaten eggs. Scramble until fully cooked.
- Add the cooked rice and chicken to the pan.
- Pour the bang bang sauce over the mixture, stirring well to combine.
- Season with salt and pepper to taste.
- Cook for an additional 2-3 minutes until everything is heated through.
- Garnish with chopped green onions and serve immediately.
