Description

Delightful stuffed sweet potatoes filled with tender BBQ chicken, topped with cheese, sour cream, and fresh garnishes for a comforting meal.


Ingredients

  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked chicken, shredded
  • 1/2 cup BBQ sauce
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 tablespoon lime juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the sweet potatoes under cool running water and pat dry.
  3. Use a fork to prick the sweet potatoes several times on each side.
  4. Arrange the sweet potatoes on a baking sheet with space in between.
  5. Drizzle olive oil over the sweet potatoes and rub them for an even coating.
  6. Season generously with salt and black pepper.
  7. Bake in the oven for 45-60 minutes until tender.
  8. While the potatoes bake, shred your cooked chicken and mix with BBQ sauce in a bowl.
  9. Finely chop red onion and cilantro for garnish.
  10. Remove the sweet potatoes and let them cool for a few minutes.
  11. Slice each sweet potato lengthwise without cutting through, creating a pocket.
  12. Fluff the insides with a fork to make room for filling.
  13. Spoon the BBQ chicken mixture into each sweet potato.
  14. Sprinkle shredded cheddar cheese on top.
  15. Return to the oven for 5-7 minutes until cheese melts.
  16. Finish with chopped red onion and cilantro, drizzle with sour cream and lime juice.
  17. Serve immediately while warm.

Notes

Customize by using different proteins or cheeses. Make ahead by preparing the chicken filling in advance.
