- 2 medium sweet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups cooked chicken, shredded
- 1/2 cup BBQ sauce
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1/2 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tablespoon lime juice
Instructions
- Preheat your oven to 400°F (200°C).
- Scrub the sweet potatoes under cool running water and pat dry.
- Use a fork to prick the sweet potatoes several times on each side.
- Arrange the sweet potatoes on a baking sheet with space in between.
- Drizzle olive oil over the sweet potatoes and rub them for an even coating.
- Season generously with salt and black pepper.
- Bake in the oven for 45-60 minutes until tender.
- While the potatoes bake, shred your cooked chicken and mix with BBQ sauce in a bowl.
- Finely chop red onion and cilantro for garnish.
- Remove the sweet potatoes and let them cool for a few minutes.
- Slice each sweet potato lengthwise without cutting through, creating a pocket.
- Fluff the insides with a fork to make room for filling.
- Spoon the BBQ chicken mixture into each sweet potato.
- Sprinkle shredded cheddar cheese on top.
- Return to the oven for 5-7 minutes until cheese melts.
- Finish with chopped red onion and cilantro, drizzle with sour cream and lime juice.
- Serve immediately while warm.
