Description

Delicious blueberry biscuits with a sweet and tangy lemon glaze, perfect for brunch or any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (cold and cubed)
  • 3/4 cup buttermilk
  • 1 cup fresh blueberries
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
  3. Cut in the cold butter using a pastry cutter until the mixture resembles coarse crumbs.
  4. Make a well in the center and stir in the buttermilk until just combined. Do not overmix.
  5. Gently fold in the blueberries.
  6. Turn the dough onto a floured surface and knead it gently just a few times.
  7. Pat the dough into a 1-inch thick rectangle and cut out your biscuits.
  8. Place the biscuits on a baking sheet lined with parchment paper and bake for 12–15 minutes, or until golden brown.
  9. While the biscuits bake, whisk together the powdered sugar, lemon juice, and lemon zest until smooth.
  10. Drizzle the lemon glaze over the warm biscuits just before serving.

Notes

For a flakier texture, refrigerate the dough for 15 minutes before baking. Feel free to substitute fresh blueberries with frozen ones.
