- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter (cold and cubed)
- 3/4 cup buttermilk
- 1 cup fresh blueberries
- 1 cup powdered sugar
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
- Cut in the cold butter using a pastry cutter until the mixture resembles coarse crumbs.
- Make a well in the center and stir in the buttermilk until just combined. Do not overmix.
- Gently fold in the blueberries.
- Turn the dough onto a floured surface and knead it gently just a few times.
- Pat the dough into a 1-inch thick rectangle and cut out your biscuits.
- Place the biscuits on a baking sheet lined with parchment paper and bake for 12–15 minutes, or until golden brown.
- While the biscuits bake, whisk together the powdered sugar, lemon juice, and lemon zest until smooth.
- Drizzle the lemon glaze over the warm biscuits just before serving.
Notes
For a flakier texture, refrigerate the dough for 15 minutes before baking. Feel free to substitute fresh blueberries with frozen ones.
