Ingredients
Scale
- 4 large shrimp, peeled and deveined
- 2 salmon fillets (6 oz each)
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/4 cup chicken broth
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt and pepper
- 4 medium russet potatoes, peeled and cut into chunks
- 1/2 cup milk
- 1 pound fresh green beans, trimmed
- 2 tablespoons butter for sautéing the green beans
- 2 cloves garlic, minced for the beans
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- Prepare the Potatoes: Peel and chop your russet potatoes into even chunks. Place them in a large pot of salted water and bring it to boil. Cook for 15-20 minutes, or until fork-tender.
- Mash the Potatoes: Drain the potatoes and return them to the pot. Mash until smooth, then incorporate the butter and milk for creaminess. Season with salt and pepper.
- Season the Seafood: Pat the shrimp and salmon dry, then coat with Cajun seasoning.
- Sear the Shrimp: Heat olive oil in a skillet over medium-high heat. Cook shrimp for 2-3 minutes on each side. Remove and set aside.
- Cook the Salmon: In the same skillet, add butter and cook salmon skin-side down for 4-5 minutes on each side.
- Make the Sauce: Melt butter and sauté garlic for 1-2 minutes. Add heavy cream, chicken broth, Dijon mustard, salt, and pepper. Simmer for 4-5 minutes.
- Combine Seafood and Sauce: Return shrimp and salmon to skillet and simmer for 2-3 minutes.
- Prepare the Green Beans: Boil a pot of salted water and cook green beans for 3-4 minutes. Drain, then sauté with butter, garlic, and red pepper flakes.
- Serve: Place mashed potatoes on plates, top with salmon and shrimp, and drizzle with sauce. Add green beans on the side.
Notes
Feel free to substitute shrimp with chicken or use a lighter cream alternative. Ensure proper potato preparation for fluffiness.
