Description

A vibrant dish of Cajun shrimp and salmon in a rich garlic cream sauce, served with creamy mashed potatoes and sautéed green beans.


Ingredients

  • 4 large shrimp, peeled and deveined
  • 2 salmon fillets (6 oz each)
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt and pepper
  • 4 medium russet potatoes, peeled and cut into chunks
  • 1/2 cup milk
  • 1 pound fresh green beans, trimmed
  • 2 tablespoons butter for sautéing the green beans
  • 2 cloves garlic, minced for the beans
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the Potatoes: Peel and chop your russet potatoes into even chunks. Place them in a large pot of salted water and bring it to boil. Cook for 15-20 minutes, or until fork-tender.
  2. Mash the Potatoes: Drain the potatoes and return them to the pot. Mash until smooth, then incorporate the butter and milk for creaminess. Season with salt and pepper.
  3. Season the Seafood: Pat the shrimp and salmon dry, then coat with Cajun seasoning.
  4. Sear the Shrimp: Heat olive oil in a skillet over medium-high heat. Cook shrimp for 2-3 minutes on each side. Remove and set aside.
  5. Cook the Salmon: In the same skillet, add butter and cook salmon skin-side down for 4-5 minutes on each side.
  6. Make the Sauce: Melt butter and sauté garlic for 1-2 minutes. Add heavy cream, chicken broth, Dijon mustard, salt, and pepper. Simmer for 4-5 minutes.
  7. Combine Seafood and Sauce: Return shrimp and salmon to skillet and simmer for 2-3 minutes.
  8. Prepare the Green Beans: Boil a pot of salted water and cook green beans for 3-4 minutes. Drain, then sauté with butter, garlic, and red pepper flakes.
  9. Serve: Place mashed potatoes on plates, top with salmon and shrimp, and drizzle with sauce. Add green beans on the side.

Notes

Feel free to substitute shrimp with chicken or use a lighter cream alternative. Ensure proper potato preparation for fluffiness.
