Description

Experience the warmth of Middle Eastern flavors with these juicy chicken koftas paired with a creamy garlic yogurt sauce.


Ingredients

  • 1 lb ground chicken
  • 1 small onion, grated
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Skewers (if grilling)
  • 1 cup plain yogurt
  • 2 cloves garlic, minced (for sauce)
  • 1 tbsp lemon juice
  • Salt to taste (for sauce)

Instructions

  1. In a large mixing bowl, combine ground chicken, grated onion, minced garlic, chopped parsley, cumin, coriander, paprika, and salt & pepper. Mix thoroughly.
  2. With wet hands, form the mixture into oval-shaped kofta; thread onto skewers.
  3. Preheat grill or skillet over medium heat. Cook kofta for about 5-7 minutes on each side until fully cooked through.
  4. In a separate bowl, mix yogurt, minced garlic, lemon juice, and salt until smooth for the sauce.
  5. Serve chicken kofta warm with garlic yogurt sauce on the side.

Notes

Make-ahead: Combine kofta ingredients the night before. Cook right before serving. Substitute ground turkey for chicken for variety.
