- 1 lb ground chicken
- 1 small onion, grated
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp paprika
- Salt and pepper to taste
- Skewers (if grilling)
- 1 cup plain yogurt
- 2 cloves garlic, minced (for sauce)
- 1 tbsp lemon juice
- Salt to taste (for sauce)
Instructions
- In a large mixing bowl, combine ground chicken, grated onion, minced garlic, chopped parsley, cumin, coriander, paprika, and salt & pepper. Mix thoroughly.
- With wet hands, form the mixture into oval-shaped kofta; thread onto skewers.
- Preheat grill or skillet over medium heat. Cook kofta for about 5-7 minutes on each side until fully cooked through.
- In a separate bowl, mix yogurt, minced garlic, lemon juice, and salt until smooth for the sauce.
- Serve chicken kofta warm with garlic yogurt sauce on the side.
Notes
Make-ahead: Combine kofta ingredients the night before. Cook right before serving. Substitute ground turkey for chicken for variety.
