Description

Experience a delightful dance of sweet and spicy flavors with tender chipotle honey chicken thighs paired with rich, creamy smoked gouda mashed potatoes.


Ingredients

  • 4 chicken thighs
  • 2 tablespoons chipotle sauce
  • 2 tablespoons honey
  • Salt and pepper, to taste
  • 2 cups potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 ounces smoked gouda cheese, shredded
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix chipotle sauce and honey. Season chicken thighs with salt and pepper.
  3. Coat chicken with the chipotle honey mixture and place in a baking dish, skin-side up.
  4. Bake for 25-30 minutes until cooked through.
  5. Meanwhile, boil potatoes in salted water until tender, about 15 minutes.
  6. Drain potatoes, then return to pot to release excess moisture.
  7. Add milk, smoked gouda, and butter to potatoes; mash until smooth.
  8. Serve chicken thighs alongside the mashed potatoes and garnish with extra honey drizzle or herbs.

Notes

For deeper flavor, marinate chicken thighs overnight. Use an air fryer for crispy chicken in less time.
