- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 1/4 cup sugar
- 1 teaspoon cinnamon
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 325°F (160°C).
- Mix the graham cracker crumbs, melted butter, 1/4 cup sugar, and 1 teaspoon cinnamon in a bowl.
- Press this mixture firmly into the bottom of your springform pan.
- Beat the cream cheese with 1/2 cup sugar until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 45-50 minutes until set.
- Allow the cheesecake to cool completely, then chill in the refrigerator for a few hours, preferably overnight.
- Top with additional cinnamon sugar if desired.
Notes
The cheesecake tastes even better the next day. It can be adapted for an air fryer by reducing the temperature slightly.
