Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Blend the cottage cheese in a mixing bowl until smooth.
- Add the eggs, almond flour, baking powder, sweetener, and a pinch of salt, mixing until well-combined.
- Gently fold in the blueberries with a spatula.
- Spoon the batter onto the prepared baking sheet, shaping it into rounds.
- Bake for 20-25 minutes until tops turn golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a make-ahead option, prepare the batter a day before and bake fresh in the morning. You can also create mini clouds in an air fryer.
