Description

A light and fluffy bread infused with juicy blueberries and creamy cottage cheese, perfect for breakfast or a delightful snack.


Ingredients

  • 1 cup cottage cheese
  • 3 large eggs
  • 1/4 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/2 cup blueberries
  • Sweetener of choice (to taste)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Blend the cottage cheese in a mixing bowl until smooth.
  3. Add the eggs, almond flour, baking powder, sweetener, and a pinch of salt, mixing until well-combined.
  4. Gently fold in the blueberries with a spatula.
  5. Spoon the batter onto the prepared baking sheet, shaping it into rounds.
  6. Bake for 20-25 minutes until tops turn golden.
  7. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a make-ahead option, prepare the batter a day before and bake fresh in the morning. You can also create mini clouds in an air fryer.
