Description

A vibrant and refreshing summer salad bursting with flavors of sweet corn, cherry tomatoes, and creamy avocado, perfect for potlucks and picnics.


Ingredients

  • 2 cups sweet corn (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1/2 cup red onion, finely chopped
  • 1/2 cup bell pepper (red or yellow), diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Combine the sweet corn, cherry tomatoes, diced cucumber, red onion, bell pepper, and chopped cilantro in a large mixing bowl.
  2. Whisk together lime juice, olive oil, salt, and pepper in a small bowl.
  3. Pour the dressing over the salad mixture, and toss gently to coat.
