Description

A savory chicken dish stuffed with creamy Brie cheese and tart cranberries, perfect for festive occasions or cozy family dinners.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces Brie cheese, rind removed and cut into small pieces
  • 1/4 cup chopped fresh parsley
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a medium saucepan over medium heat.
  3. Add the fresh cranberries to the pan, stirring occasionally until they burst and soften, about 5 minutes.
  4. Stir in the honey, orange juice, cinnamon, ginger, salt, and black pepper; continue cooking for another 3–4 minutes until the mixture thickens slightly. Remove from heat and allow to cool.
  5. Carefully cut a pocket in the center of each chicken breast, ensuring you don’t slice all the way through.
  6. Stuff each breast with the Brie cheese pieces equally.
  7. Spoon the cooled cranberry mixture over the cheese inside each chicken breast.
  8. Secure the opening of the stuffed chicken with toothpicks.
  9. Heat an oven-safe skillet over medium-high heat, then gently place the stuffed chicken breasts into the skillet; sear for 2–3 minutes on each side until golden-brown.
  10. Combine the Panko breadcrumbs with the melted butter in a small bowl.
  11. Spread the panko mixture evenly over the tops of each chicken breast.
  12. Return the chicken to the skillet and transfer it to the preheated oven; bake for 20–25 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  13. Allow the chicken to rest for 5 minutes before serving; sprinkle with freshly chopped parsley just before serving.

Notes

For a different flavor, you can swap out Brie for goat cheese or creamy feta. Ensure to use fresh cranberries for optimum flavor.
