- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1/2 cup fresh cranberries
- 1/4 cup honey
- 1/4 cup orange juice
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces Brie cheese, rind removed and cut into small pieces
- 1/4 cup chopped fresh parsley
- 1/2 cup panko breadcrumbs
- 1 tablespoon butter, melted
Instructions
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a medium saucepan over medium heat.
- Add the fresh cranberries to the pan, stirring occasionally until they burst and soften, about 5 minutes.
- Stir in the honey, orange juice, cinnamon, ginger, salt, and black pepper; continue cooking for another 3–4 minutes until the mixture thickens slightly. Remove from heat and allow to cool.
- Carefully cut a pocket in the center of each chicken breast, ensuring you don’t slice all the way through.
- Stuff each breast with the Brie cheese pieces equally.
- Spoon the cooled cranberry mixture over the cheese inside each chicken breast.
- Secure the opening of the stuffed chicken with toothpicks.
- Heat an oven-safe skillet over medium-high heat, then gently place the stuffed chicken breasts into the skillet; sear for 2–3 minutes on each side until golden-brown.
- Combine the Panko breadcrumbs with the melted butter in a small bowl.
- Spread the panko mixture evenly over the tops of each chicken breast.
- Return the chicken to the skillet and transfer it to the preheated oven; bake for 20–25 minutes until the chicken reaches an internal temperature of 165°F (74°C).
- Allow the chicken to rest for 5 minutes before serving; sprinkle with freshly chopped parsley just before serving.
Notes
For a different flavor, you can swap out Brie for goat cheese or creamy feta. Ensure to use fresh cranberries for optimum flavor.
