Instructions
- Heat the olive oil in a large skillet over medium heat until glistening.
- Cook the chicken breasts seasoned with salt and pepper for 6-7 minutes on each side until golden brown and cooked through.
- Transfer the chicken to a plate and set aside.
- Sauté the chopped onion and minced garlic in the same skillet until softened, about 3-4 minutes.
- Add the rice and pour in the chicken broth, bringing it to a gentle boil.
- Reduce the heat, cover the skillet, and simmer for about 15 minutes until the rice is fluffy.
- Stir in the heavy cream and return the chicken to the skillet, heating through for 2-3 minutes.
- Serve hot over rice, garnished with fresh parsley.
