- 2 lbs beef chuck roast
- 4 dried guajillo chiles
- 2 dried ancho chiles
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tsp ground cumin
- 1 tsp dried oregano
- 4 cups beef broth
- Salt and pepper to taste
- 12 corn tortillas
- Oil for frying
- Chopped cilantro for garnish
- Lime wedges for serving
Instructions
- In a pot, boil the dried chiles until softened, then blend with onion, garlic, cumin, oregano, and beef broth until smooth.
- Season the beef with salt and pepper, then add to the pot with the blended sauce.
- Simmer the beef on low heat for about 2-3 hours until tender.
- Shred the beef and set aside, reserving the broth.
- Heat oil in a skillet and dip each tortilla in the reserved broth, then fry until crispy.
- Fill each tortilla with shredded beef and fold in half.
- Serve hot with chopped cilantro and lime wedges.
Notes
- For extra flavor, marinate the beef overnight.
- Adjust the spice level by adding more or fewer chiles.
- These tacos can be served with a side of consomé for dipping.
