- 1/2 cup mayonnaise
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 4 brioche buns, split
- 4 cups chopped romaine lettuce
- 1/2 cup shaved Parmesan cheese
- Optional: Tomato slices
Instructions
- In a medium bowl, whisk together buttermilk, hot sauce, salt, and pepper. Add chicken breasts, cover, and marinate in fridge for at least 30 minutes.
- Set up a dredging station with flour, cornstarch, garlic powder, onion powder, paprika, and cayenne in a shallow dish.
- Remove chicken from buttermilk, dredge in flour mixture, and place on a wire rack.
- Heat vegetable oil in a skillet to 350°F (175°C).
- Fry chicken in batches until golden brown, about 6-8 minutes per side.
- Drain chicken on a wire rack lined with paper towels.
- In a bowl, whisk together mayonnaise, Parmesan, lemon juice, Dijon, minced garlic, and black pepper.
- Slowly drizzle in olive oil while whisking to emulsify the dressing.
- Optional: Toast brioche buns for extra flavor.
- Assemble the sandwich: Spread dressing on both buns, add lettuce, fried chicken, and top with shaved Parmesan and tomato slices.
- Serve immediately.

For a healthier version, use an air fryer or bake the chicken. Customize with grilled tofu for a vegetarian option.
