- 1 lb salmon fillet, skinless and boneless
- 1 cup breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup olive oil
- 1/2 cup heavy cream
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- Fresh parsley, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the salmon into bite-sized pieces.
- In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
- In another bowl, beat the eggs.
- Dredge each salmon piece in flour, dip in the egg, and then coat with the breadcrumb mixture.
- Heat olive oil in a skillet over medium heat and fry the salmon bites until golden brown on all sides.
- Transfer the salmon bites to a baking sheet and bake for 10 minutes.
- In a saucepan, heat heavy cream and add minced garlic and lemon juice, stirring until combined.
- Serve the salmon bites with the garlic cream sauce drizzled on top and garnish with fresh parsley.
