Ingredients

- 2 cups broccoli florets
- 8 ounces pasta (bowtie or rotini)
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook the Pasta: Boil salted water and cook the pasta according to package instructions until al dente. Drain and let cool.
- Combine the Vegetables: In a mixing bowl, combine cooled pasta, broccoli, cherry tomatoes, red onion, feta, and olives. Toss gently.
- Make the Dressing: In a small bowl, whisk olive oil and lemon juice; season with salt and pepper.
- Dress the Salad: Pour dressing over the salad and toss gently to coat.
- Serve & Enjoy: Chill for at least 30 minutes before serving or serve at room temperature.
