- 4 flour, whole wheat, or spinach tortillas
- 1 cucumber, thinly sliced
- 1 bell pepper, thinly sliced
- 1 cup peppery arugula
- 8 oz cream cheese or hummus
- 1/4 cup fresh herbs (dill or chives), finely chopped
- Optional: thinly sliced carrots, red onions, or avocado
Instructions
- Prepare the ingredients: Wash and slice all vegetables into thin strips.
- Mix the spread: In a mixing bowl, blend cream cheese with herbs until smooth.
- Assemble the roll-ups: Lay a tortilla flat, spread the creamy mixture, and arrange the vegetables along one edge.
- Roll it up tightly from the edge where the vegetables are.
- Slice into bite-sized pieces and serve on a platter.
Notes
