Description

Delightful and colorful roll-ups filled with fresh vegetables and creamy spread, perfect for picnics or light lunches.


Ingredients

  • 4 flour, whole wheat, or spinach tortillas
  • 1 cucumber, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 cup peppery arugula
  • 8 oz cream cheese or hummus
  • 1/4 cup fresh herbs (dill or chives), finely chopped
  • Optional: thinly sliced carrots, red onions, or avocado

Instructions

  1. Prepare the ingredients: Wash and slice all vegetables into thin strips.
  2. Mix the spread: In a mixing bowl, blend cream cheese with herbs until smooth.
  3. Assemble the roll-ups: Lay a tortilla flat, spread the creamy mixture, and arrange the vegetables along one edge.
  4. Roll it up tightly from the edge where the vegetables are.
  5. Slice into bite-sized pieces and serve on a platter.

Notes

These roll-ups are best enjoyed fresh, but can be made a day in advance and stored in the fridge.
