- 1 pound cod fillets, cut into bite-sized pieces
- 1/4 cup butter, melted
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (plus more for garnish)
- Lemon wedges (for serving)
- For the creamy dip:
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon dried dill
- 1 teaspoon fresh chives, chopped
- Salt & pepper, to taste
Instructions
- Prepare the Cod: Cut the cod fillets into bite-sized pieces and pat them dry with a paper towel.
- Melt Butter & Mix Seasoning: In a small bowl, combine the melted butter, minced garlic, paprika, salt, and pepper.
- Coat the Cod: Toss the diced cod in the butter-garlic mixture until well coated. Sprinkle fresh parsley on top.
- Cook: Heat a nonstick skillet over medium heat. Add the cod bites in a single layer and cook for about 3-4 minutes on each side, until golden and crispy.
- Make the Creamy Lemon Herb Dip: Combine sour cream, mayonnaise, lemon juice, lemon zest, dried dill, and fresh chives in a mixing bowl. Season with salt and pepper, and stir until creamy.
- Serve: Plate the cod bites with the creamy dip, garnished with additional parsley and lemon wedges.
Notes
For a healthier option, substitute butter with olive oil. You can also adapt the recipe to an air fryer for a crispy finish.
