Instructions
- Marinate the chicken breasts in olive oil, salt, and pepper for at least 30 minutes.
- Preheat your grill or grill pan and cook the marinated chicken for 6-7 minutes on each side until the internal temperature reaches 165°F.
- While the chicken is cooking, prepare the rice or quinoa according to package instructions.
- Chop the cucumber, tomato, and slice the red onion.
- Let the grilled chicken rest for a few minutes, then slice into strips.
