Description

A vibrant and flavorful dish that combines marinated grilled chicken with fresh vegetables, fluffy grains, and creamy tzatziki sauce.


Ingredients

  • 2 chicken breasts, boneless and skinless
  • 1 cup cooked rice or quinoa
  • 1 cucumber, diced
  • 1 tomato, diced
  • 1 red onion, sliced
  • 1 cup tzatziki sauce
  • 1 cup feta cheese, crumbled
  • Olive oil, to taste
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Marinate the chicken breasts in olive oil, salt, and pepper for at least 30 minutes.
  2. Preheat your grill or grill pan and cook the marinated chicken for 6-7 minutes on each side until the internal temperature reaches 165°F.
  3. While the chicken is cooking, prepare the rice or quinoa according to package instructions.
  4. Chop the cucumber, tomato, and slice the red onion.
  5. Let the grilled chicken rest for a few minutes, then slice into strips.
  6. Assemble the bowls with a base of rice or quinoa, topped with grilled chicken, diced vegetables, tzatziki sauce, and crumbled feta cheese.
  7. Garnish with parsley and serve immediately.
