- 3 medium zucchini, thinly sliced
- 1 pound ground meat (beef, turkey, or chicken)
- 1 cup marinara sauce
- 2 cups shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Preheat your oven to 375°F (190°C).
- Heat a tablespoon of olive oil in a skillet over medium heat. Add the ground meat, Italian seasoning, salt, and pepper, breaking the meat apart. Cook until browned, about 5-7 minutes, stirring occasionally to ensure even cooking. Drain excess fat.
- Layer half of the zucchini slices in a 9×13 inch baking dish, creating a beautiful base.
- Spread half of the meat mixture evenly across the zucchini.
- Pour half of the marinara sauce over this layer.
- Repeat the layering with the remaining zucchini, meat, and marinara sauce.
- Top generously with shredded mozzarella cheese.
- Cover with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and golden-brown.
- Allow to cool slightly before serving.

Make-ahead tips: Assemble a day in advance and refrigerate. For a crispy top, consider using an air fryer for smaller batches.
