Description

A delightful tropical twist on classic banana bread made with ripe bananas, crushed pineapple, and shredded coconut, creating a moist, flavorful loaf.


Ingredients

  • 3 ripe bananas, mashed
  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1/2 cup sugar
  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 2 eggs, beaten

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, mix the mashed bananas, crushed pineapple, melted butter, and sugar until well combined.
  3. Stir in the eggs and vanilla extract.
  4. In another bowl, combine flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the shredded coconut.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
