Description

A vibrant grilled chicken dish infused with honey and lime, topped with fresh mango salsa for a refreshing summer meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons honey
  • 2 limes (zest and juice)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 mango (diced)
  • 0.25 cup red onion (finely chopped)
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro (chopped)

Instructions

  1. Whisk together honey, lime juice, lime zest, minced garlic, olive oil, salt, and black pepper until smooth.
  2. Add chicken breasts to the marinade, coat thoroughly, cover, and refrigerate for at least 30 minutes.
  3. Preheat grill over medium-high heat. Remove chicken from marinade, letting excess drip off.
  4. Grill chicken for about 6–7 minutes on each side or until cooked through.
  5. Prepare the salsa by mixing together diced mango, red onion, lime juice, and cilantro in a bowl.
  6. Once grilled, let the chicken rest, then slice and top with mango salsa before serving.

Notes

Marinate chicken overnight for enhanced flavors. You can prepare the mango salsa a few hours in advance.
