- 4 boneless, skinless chicken breasts
- 3 tablespoons honey
- 2 limes (zest and juice)
- 2 cloves garlic (minced)
- 2 tablespoons olive oil
- 0.5 teaspoon salt
- 0.5 teaspoon black pepper
- 1 mango (diced)
- 0.25 cup red onion (finely chopped)
- 1 tablespoon lime juice
- 2 tablespoons fresh cilantro (chopped)
Instructions
- Whisk together honey, lime juice, lime zest, minced garlic, olive oil, salt, and black pepper until smooth.
- Add chicken breasts to the marinade, coat thoroughly, cover, and refrigerate for at least 30 minutes.
- Preheat grill over medium-high heat. Remove chicken from marinade, letting excess drip off.
- Grill chicken for about 6–7 minutes on each side or until cooked through.
- Prepare the salsa by mixing together diced mango, red onion, lime juice, and cilantro in a bowl.
- Once grilled, let the chicken rest, then slice and top with mango salsa before serving.
Notes
Marinate chicken overnight for enhanced flavors. You can prepare the mango salsa a few hours in advance.
