- 2 medium zucchinis, grated
- 2 large eggs
- 1/4 cup oat flour (or almond flour)
- 1/4 cup grated Parmesan cheese
- 1/4 cup plain Greek yogurt (or cottage cheese)
- 1 garlic clove, finely minced
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried oregano or thyme
- 2 tablespoons chopped fresh parsley or dill
- 1 tablespoon olive oil (or olive oil spray)
Instructions
- Grate the zucchini and squeeze out excess moisture.
- Mix the grated zucchini, eggs, flour, Parmesan, yogurt, garlic, salt, pepper, oregano, and herbs in a bowl.
- Heat a non-stick skillet over medium heat and add olive oil.
- Portion the batter into the skillet, flattening slightly.
- Flip after 3-4 minutes, cooking until golden brown.
- Cool on a paper towel-lined plate before serving warm.
