Description

Crispy on the outside and tender inside, these Healthy Zucchini Fritters are a delightful way to enjoy fresh zucchini with a burst of flavor.


Ingredients

  • 2 medium zucchinis, grated
  • 2 large eggs
  • 1/4 cup oat flour (or almond flour)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup plain Greek yogurt (or cottage cheese)
  • 1 garlic clove, finely minced
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano or thyme
  • 2 tablespoons chopped fresh parsley or dill
  • 1 tablespoon olive oil (or olive oil spray)

Instructions

  1. Grate the zucchini and squeeze out excess moisture.
  2. Mix the grated zucchini, eggs, flour, Parmesan, yogurt, garlic, salt, pepper, oregano, and herbs in a bowl.
  3. Heat a non-stick skillet over medium heat and add olive oil.
  4. Portion the batter into the skillet, flattening slightly.
  5. Flip after 3-4 minutes, cooking until golden brown.
  6. Cool on a paper towel-lined plate before serving warm.
