- 4 boneless, skinless chicken breasts
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1 clove garlic, minced
- Salt and pepper to taste
- 1 cup marinara sauce
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together the ricotta cheese, Parmesan cheese, parsley, basil, garlic, salt, and pepper.
- Flatten the chicken breasts using a meat mallet to an even thickness.
- Spread the ricotta mixture evenly over each chicken breast.
- Roll up each chicken breast tightly and secure with toothpicks.
- Heat olive oil in a skillet over medium heat and sear the chicken rolls on all sides until golden brown.
- Transfer the chicken rolls to a baking dish and pour marinara sauce over them.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
- Remove toothpicks before serving and enjoy!
