Description

A delightful dance of sweet and spicy flavors, featuring tender chicken enveloped in a luscious, tangy sauce made with peaches and jalapenos.


Ingredients

  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 jalapenos, diced
  • 3 peaches, diced
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt and black pepper on both sides.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat until shimmering.
  4. Add the seasoned chicken breasts and sear for 3-4 minutes on each side until golden brown.
  5. Remove the chicken from the skillet and set it aside on a plate.
  6. Add the diced jalapenos and peaches to the skillet and sauté for 2-3 minutes until softened.
  7. Whisk together honey, apple cider vinegar, water, and cornstarch in a small bowl.
  8. Pour the mixture over the jalapenos and peaches, stirring well to combine.
  9. Return the chicken to the skillet, spooning the sauce over each piece.
  10. Transfer the skillet to the preheated oven and bake for 20-25 minutes.
  11. Remove from the oven and let it rest for a few minutes before serving.
