A vibrant twist on classic potato salad featuring Jamaican jerk seasoning for a zesty flavor explosion.

- 2 lbs Yukon Gold potatoes, peeled and cubed
- 1/4 cup mayonnaise
- 2 tbsp Jamaican jerk seasoning
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Boil the potatoes: Fill a large pot with salted water, bringing it to a boil. Add the cubed Yukon Gold potatoes, cooking until they’re fork-tender, about 12-15 minutes.
- Prepare the dressing: While your potatoes are cooking, whisk together the mayonnaise and Jamaican jerk seasoning until smooth.
- Cool the potatoes: Once cooked, drain them and let them cool for approximately 15 minutes.
- Fold ingredients together: Transfer the cooled potatoes into the bowl with the jerk mayonnaise. Add the red onion and parsley, and fold gently.
- Season and chill: Add salt and pepper to taste, and refrigerate for at least one hour before serving.
Notes
Salad tastes even better the next day, and can be customized with more spices or different vegetables.
