Indulge in the comforting flavors of a loaded baked potato topped with juicy steak bites, melty cheddar, and fresh green onions.
Ingredients
Scale
- 4 large russet potatoes
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 8 ounces sirloin steak, cut into bite-sized pieces
- 1 tablespoon butter
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped green onions
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the russet potatoes under running water. Pat dry and poke each potato several times with a fork.
- Rub the potatoes with olive oil and coat them evenly with salt, black pepper, garlic powder, and paprika.
- Place the seasoned potatoes directly on the oven rack and bake for 50-60 minutes, or until fork-tender.
- While the potatoes are baking, season the sirloin pieces with salt and black pepper. In a skillet, melt the butter over medium-high heat and add the steak.
- Sear the steak for about 3-4 minutes on each side until medium-rare.
- Once the potatoes are done baking, carefully remove them from the oven. Slice each potato lengthwise and gently mash the insides with a fork.
- Top each potato with steak bites and sprinkle shredded cheddar cheese over the top.
- Return the loaded potatoes to the oven for another 3-5 minutes until the cheese is melted.
- Garnish with chopped green onions and serve hot.
