Description

Indulge in the comforting flavors of a loaded baked potato topped with juicy steak bites, melty cheddar, and fresh green onions.


Ingredients

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 8 ounces sirloin steak, cut into bite-sized pieces
  • 1 tablespoon butter
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the russet potatoes under running water. Pat dry and poke each potato several times with a fork.
  3. Rub the potatoes with olive oil and coat them evenly with salt, black pepper, garlic powder, and paprika.
  4. Place the seasoned potatoes directly on the oven rack and bake for 50-60 minutes, or until fork-tender.
  5. While the potatoes are baking, season the sirloin pieces with salt and black pepper. In a skillet, melt the butter over medium-high heat and add the steak.
  6. Sear the steak for about 3-4 minutes on each side until medium-rare.
  7. Once the potatoes are done baking, carefully remove them from the oven. Slice each potato lengthwise and gently mash the insides with a fork.
  8. Top each potato with steak bites and sprinkle shredded cheddar cheese over the top.
  9. Return the loaded potatoes to the oven for another 3-5 minutes until the cheese is melted.
  10. Garnish with chopped green onions and serve hot.
