Ingredients

- 2 large potatoes, diced
- 1 lb ground beef or turkey
- 1 tsp chili powder
- 1 tsp cumin
- 1 cup black beans, drained and rinsed
- 1 cup corn (fresh or frozen)
- 1 cup diced tomatoes
- 1 avocado, sliced
- 1 cup shredded lettuce
- 1 cup shredded cheese (cheddar or nacho blend)
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 425°F (220°C).
- Toss diced potatoes in olive oil, salt, and pepper.
- Spread the potatoes on a baking sheet for roasting.
- Roast the potatoes for 25-30 minutes, flipping halfway.
- Heat a large skillet over medium heat.
- Add the ground meat and cook for 8-10 minutes until browned.
- Sprinkle chili powder, cumin, salt, and pepper onto the meat.
- Assemble the bowls with roasted potatoes, seasoned meat, black beans, corn, and diced tomatoes.
- Top with shredded cheese, lettuce, and avocado slices. Serve immediately.
