Description

A delicious Loaded Potato Taco Bowl featuring crispy roasted potatoes, seasoned meat, and fresh toppings in a vibrant mix.


Ingredients

  • 2 large potatoes, diced
  • 1 lb ground beef or turkey
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1 cup shredded lettuce
  • 1 cup shredded cheese (cheddar or nacho blend)
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss diced potatoes in olive oil, salt, and pepper.
  3. Spread the potatoes on a baking sheet for roasting.
  4. Roast the potatoes for 25-30 minutes, flipping halfway.
  5. Heat a large skillet over medium heat.
  6. Add the ground meat and cook for 8-10 minutes until browned.
  7. Sprinkle chili powder, cumin, salt, and pepper onto the meat.
  8. Assemble the bowls with roasted potatoes, seasoned meat, black beans, corn, and diced tomatoes.
  9. Top with shredded cheese, lettuce, and avocado slices. Serve immediately.
