Description

A vibrant and flavorful pasta dish featuring fresh vegetables, creamy feta, and a tangy dressing that evokes the essence of the Mediterranean.


Ingredients

  • 8 oz pasta (such as penne or fusilli)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, finely chopped
  • 1/4 cup black olives, sliced
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water and add the pasta. Cook according to package instructions until al dente. Drain in a colander and let it cool slightly.
  2. In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, diced cucumber, crumbled feta, finely chopped red onion, and sliced black olives.
  3. In a separate small bowl, whisk together the olive oil, balsamic vinegar, oregano, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss gently to combine all the ingredients. Avoid mashing the feta too much.
  5. Serve immediately or let it chill in the refrigerator for 30 minutes to allow the flavors to meld together.

Notes

Preparing ahead of time allows flavors to deepen. You can mix all ingredients and store in an airtight container in the fridge for up to three days.
