- 4 flour tortillas
- 1 cup fresh spinach (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato (diced)
- 1/4 cup red onion (thinly sliced)
- 1 tablespoon olive oil
- Black pepper (to taste)
Instructions
- In a mixing bowl, combine the shredded mozzarella, crumbled feta, chopped spinach, diced tomato, thinly sliced red onion, and a sprinkle of black pepper. Stir well until all ingredients mingle together harmoniously.
- Lay one tortilla flat on a clean surface. Carefully place one-fourth of the filling mixture on one half of the tortilla. Gently fold the other half over the filling, creating a semi-circle.
- In a non-stick skillet, heat a tablespoon of olive oil over medium heat. Allow the oil to warm up, shimmering but not smoking.
- Place the filled tortilla in the skillet. Let it cook for 3-4 minutes, or until the underside turns golden brown and slightly crispy. Carefully flip the quesadilla using your spatula, and cook for another 3-4 minutes on the other side until it reaches the same delightful golden hue.
- Remove the quesadilla from heat and slice it into wedges. Serve warm, allowing the fragrant aromas to beckon everyone to the table.

Make ahead by preparing the filling a day in advance. You can use an air fryer for a healthier version or bake at 400°F for 10-12 minutes.
