Description

Delight in these Mediterranean quesadillas, where creamy feta meets fresh spinach and juicy tomatoes, all enveloped in a crispy tortilla.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. In a mixing bowl, combine the shredded mozzarella, crumbled feta, chopped spinach, diced tomato, thinly sliced red onion, and a sprinkle of black pepper. Stir well until all ingredients mingle together harmoniously.
  2. Lay one tortilla flat on a clean surface. Carefully place one-fourth of the filling mixture on one half of the tortilla. Gently fold the other half over the filling, creating a semi-circle.
  3. In a non-stick skillet, heat a tablespoon of olive oil over medium heat. Allow the oil to warm up, shimmering but not smoking.
  4. Place the filled tortilla in the skillet. Let it cook for 3-4 minutes, or until the underside turns golden brown and slightly crispy. Carefully flip the quesadilla using your spatula, and cook for another 3-4 minutes on the other side until it reaches the same delightful golden hue.
  5. Remove the quesadilla from heat and slice it into wedges. Serve warm, allowing the fragrant aromas to beckon everyone to the table.

Notes

Make ahead by preparing the filling a day in advance. You can use an air fryer for a healthier version or bake at 400°F for 10-12 minutes.
