- 3 tbsp olive oil (for marinade)

- ½ cucumber (grated, squeezed dry)
- ½ red onion (thinly sliced)
- ½ cup kalamata olives (pitted)
- ⅓ cup feta cheese (crumbled)
- ¼ cup fresh herbs (parsley or dill, chopped)
- 1 cup Greek yogurt (plain)
- 1 tbsp fresh dill (chopped)
- 3 tbsp olive oil (for vinaigrette)
- 2 tbsp lemon juice (fresh, for vinaigrette)
- 1 tsp honey (omit for Whole30)
- 1 minced garlic clove (for vinaigrette)
- Pinch of oregano (for vinaigrette)
Instructions
- Marinate the steak: In a medium mixing bowl, blend together olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Coat the sirloin steak in this aromatic mixture. Allow it to marinate for at least 30 minutes.
- Prepare the tzatziki sauce: In another bowl, whisk the Greek yogurt together with the grated cucumber, fresh lemon juice, minced garlic, and dill. Season this mixture with salt and pepper to your liking. Chill it in the refrigerator.
- Make the vinaigrette: In a small bowl, combine olive oil, lemon juice, honey, minced garlic, and oregano. Whisk until combined.
- Cook the steak: Heat a heavy skillet over medium-high heat. Once hot, add the marinated steak and sear for about 4-5 minutes on each side until browned. Let rest for at least 5 minutes.
- Assemble the bowl: In each serving bowl, start with a bed of cooked grains. Layer the sliced steak atop the grains. Add roasted chickpeas, halved cherry tomatoes, diced cucumber, red onion, kalamata olives, and crumbled feta. Drizzle with tzatziki and vinaigrette. Sprinkle with fresh herbs.

Let the steak marinate for at least 30 minutes, preferably overnight, for maximum flavor. This recipe is versatile; customize it by swapping proteins or adding extra vegetables.
