Description

Delightful crispy Mexican potatoes seasoned with a rich blend of spices, perfect for any occasion.


Ingredients

  • 6 medium potatoes (Russets or Yukon Gold preferred)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the potatoes and cut them into even 1-inch cubes.
  3. In a large mixing bowl, combine cubed potatoes with olive oil, salt, black pepper, paprika, garlic powder, onion powder, chili powder, cumin, oregano, and parsley. Toss to coat evenly.
  4. Transfer the seasoned potatoes to a rimmed baking sheet in a single layer.
  5. Bake for 30-35 minutes, flipping halfway through, until golden brown and crispy.
  6. Serve hot as a side dish or snack.

Notes

Make-ahead by chopping and seasoning potatoes in advance. For a cheesy variation, sprinkle grated cheese during the last 5 minutes of baking.
