Description

A vibrant and flavorful toast featuring creamy avocado and smoky charred corn, topped with cotija cheese and fresh herbs.


Ingredients

  • 2 ripe avocados
  • 1 cup charred corn
  • 1/2 cup cotija cheese, crumbled
  • 1 lime, juiced
  • 1/2 teaspoon chili powder
  • Salt, to taste
  • 4 slices of bread
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Toast the bread until golden and crisp.
  2. Mash the avocados in a mixing bowl until creamy, then stir in lime juice, salt, and chili powder.
  3. Spread the avocado mixture generously on the toasted bread.
  4. Top with charred corn and sprinkle with crumbled cotija cheese.
  5. Garnish with fresh cilantro if desired.
  6. Serve immediately and enjoy!

Notes

For best results, use ripe avocados and season each layer adequately. Can prepare the avocado mixture a few hours ahead.
