Description

A delectable dish featuring roasted cauliflower drizzled with a creamy tahini-honey sauce, infused with Moroccan spices.


Ingredients

  • 1 head of cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons tahini
  • 1 tablespoon honey
  • Juice of 1 lemon
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the cauliflower florets with olive oil, cumin, coriander, smoked paprika, salt, and pepper.
  3. Toss everything together, ensuring every floret is evenly coated.
  4. Spread the cauliflower on a baking sheet in a single layer.
  5. Roast for about 25-30 minutes, flipping halfway through.
  6. While the cauliflower is roasting, whisk together tahini, honey, and lemon juice in a small bowl.
  7. Once the cauliflower is done, drizzle the tahini-honey sauce over the top and gently toss.
  8. Garnish with fresh parsley before serving.

Notes

For a vegan option, substitute honey with maple syrup.
