Ingredients

- 1 head of cauliflower, cut into florets
- 3 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons tahini
- 1 tablespoon honey
- Juice of 1 lemon
- Fresh parsley for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the cauliflower florets with olive oil, cumin, coriander, smoked paprika, salt, and pepper.
- Toss everything together, ensuring every floret is evenly coated.
- Spread the cauliflower on a baking sheet in a single layer.
- Roast for about 25-30 minutes, flipping halfway through.
- While the cauliflower is roasting, whisk together tahini, honey, and lemon juice in a small bowl.
- Once the cauliflower is done, drizzle the tahini-honey sauce over the top and gently toss.
- Garnish with fresh parsley before serving.

For a vegan option, substitute honey with maple syrup.
