A delightful one-pan dish featuring juicy chicken thighs with long-grain rice, all enveloped in a sweet and smoky honey BBQ sauce.

- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- ½ cup BBQ sauce
- ¼ cup honey
- 1 cup mixed vegetables (frozen or fresh)
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- Salt and pepper to taste
Instructions
- Heat a large skillet over medium heat and drizzle with oil to coat.
- Season the chicken with salt, pepper, garlic powder, onion powder, and smoked paprika. Sear for about 5 minutes on each side until golden brown.
- In a small bowl, whisk together BBQ sauce and honey.
- Pour the BBQ honey mixture over the chicken and stir to coat.
- Add the long-grain rice and chicken broth. Stir to combine.
- Bring the mixture to a simmer, then cover and reduce heat to low. Cook for about 20 minutes.
- In the last 5 minutes, sprinkle mixed vegetables on top, cover lightly to steam.
- Remove from heat, let sit for 5 minutes, then fluff the rice with a fork.
