Description

A delightful one-pan dish featuring juicy chicken thighs with long-grain rice, all enveloped in a sweet and smoky honey BBQ sauce.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium heat and drizzle with oil to coat.
  2. Season the chicken with salt, pepper, garlic powder, onion powder, and smoked paprika. Sear for about 5 minutes on each side until golden brown.
  3. In a small bowl, whisk together BBQ sauce and honey.
  4. Pour the BBQ honey mixture over the chicken and stir to coat.
  5. Add the long-grain rice and chicken broth. Stir to combine.
  6. Bring the mixture to a simmer, then cover and reduce heat to low. Cook for about 20 minutes.
  7. In the last 5 minutes, sprinkle mixed vegetables on top, cover lightly to steam.
  8. Remove from heat, let sit for 5 minutes, then fluff the rice with a fork.
