Description

A comforting one-pan meal featuring tender chicken glazed with honey and BBQ sauce, served with fluffy rice and crunchy vegetables.


Ingredients

  • 1 lb chicken breasts or thighs
  • 1 cup long-grain white rice
  • 1 cup chicken broth
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat a drizzle of olive oil in a large skillet over medium heat.
  2. Add chopped onion and bell pepper, and sauté until softened, about 5 minutes.
  3. Push the veggies to one side and brown the chicken in the skillet, about 4-5 minutes per side.
  4. Combine honey and BBQ sauce in a bowl and pour it over the chicken.
  5. Sprinkle the rice around the chicken and pour in the chicken broth. Stir gently.
  6. Increase heat to high and bring to a gentle boil.
  7. Lower heat, cover, and simmer for about 20 minutes, until the rice is cooked and chicken is done.
  8. Fluff the rice with a fork and serve hot.

Notes

For added flavor, consider using homemade chicken broth. This dish can be made ahead by prepping the chicken and vegetable base a day in advance.
