A comforting one-pan meal featuring tender chicken glazed with honey and BBQ sauce, served with fluffy rice and crunchy vegetables.

- 1 lb chicken breasts or thighs
- 1 cup long-grain white rice
- 1 cup chicken broth
- 1/2 cup honey
- 1/2 cup BBQ sauce
- 1 onion, chopped
- 1 bell pepper, chopped
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat a drizzle of olive oil in a large skillet over medium heat.
- Add chopped onion and bell pepper, and sauté until softened, about 5 minutes.
- Push the veggies to one side and brown the chicken in the skillet, about 4-5 minutes per side.
- Combine honey and BBQ sauce in a bowl and pour it over the chicken.
- Sprinkle the rice around the chicken and pour in the chicken broth. Stir gently.
- Increase heat to high and bring to a gentle boil.
- Lower heat, cover, and simmer for about 20 minutes, until the rice is cooked and chicken is done.
- Fluff the rice with a fork and serve hot.
Notes
For added flavor, consider using homemade chicken broth. This dish can be made ahead by prepping the chicken and vegetable base a day in advance.
