Description

Ingredients

  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon garlic (minced)
  • 1 tablespoon ginger (minced)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat until it shimmers.
  2. Cook the chicken for 6-7 minutes per side until golden brown and cooked through.
  3. Remove the chicken and set aside.
  4. Sauté minced garlic, ginger, and brown sugar for 1-2 minutes.
  5. Incorporate pineapple chunks and soy sauce, simmer for 3-4 minutes.
  6. Combine the cooked rice, mixing until coated with sauce.
  7. Reintroduce the sliced chicken into the skillet and mix well.
  8. Serve with fresh herbs and lime wedges.
