A delicious and refreshing drink combining sweet watermelon and creamy coconut milk, perfect for hot summer days.
Ingredients

- 60 g tapioca pearls (sago)
- 400 g watermelon (divided into two portions)
- 400 ml coconut milk
- 1000 ml water
Instructions
- Bring 1000 ml of water to a rolling boil in a medium-sized saucepan.
- Add the sago pearls to the boiling water, stirring gently. Cook for 15-20 minutes until translucent.
- Remove from heat and let the pearls sit for an additional 5 minutes, then strain and rinse under cold water.
- Blend half of the watermelon into a smooth puree, strain if desired, and dice the remaining half.
- In a pitcher, combine the watermelon puree and coconut milk. Stir to mix.
- Layer serving glasses with sago pearls, diced watermelon, and the coconut-watermelon mixture. Repeat layers and top with additional sago and watermelon.
Notes
Customize with lime juice for tang or add mint leaves for extra freshness.
