- 2 Zucchini, diced
- 2 Bell Peppers (red, yellow, or orange), diced
- 1 Red Onion, diced
- 1 cup Cherry Tomatoes, halved
- 3 tbsp Olive Oil
- 3 cloves Garlic, minced
- 2 tsp Greek Seasoning
- Fresh Herbs (Oregano and Thyme), to taste
- 1 Lemon, juiced
Instructions
- Preheat the oven to 425°F (220°C).
- Chop the vegetables into bite-sized pieces, ensuring even sizes.
- In a large mixing bowl, toss the vegetables with olive oil, minced garlic, Greek seasoning, and fresh herbs.
- Spread the seasoned vegetables in a single layer on a baking sheet.
- Roast for about 20-25 minutes, stirring halfway through, until golden-brown and tender.
- Drizzle fresh lemon juice over before serving.
Notes
To enhance flavors, prepare vegetables a day in advance. Can also be made in an air fryer at 375°F (190°C) for about 15 minutes.
