Description

A flavorful and aromatic roasted spring chicken dish infused with lemon and thyme, perfect for a delightful feast.


Ingredients

Scale
  • 1 whole spring chicken (about 45 lbs)
  • 2 lemons, quartered
  • 1 bunch of fresh thyme
  • 4 cloves of garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1 cup chicken broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix olive oil, minced garlic, salt, and pepper.
  3. Rub the mixture all over the chicken, including under the skin.
  4. Stuff the cavity of the chicken with lemon quarters and thyme.
  5. Place the chicken in a roasting pan and pour chicken broth around it.
  6. Roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 10 minutes before carving.

Notes

  • For extra flavor, marinate the chicken overnight with the olive oil mixture.
  • Serve with roasted vegetables or a fresh salad.
  • Leftovers can be stored in the refrigerator for up to 3 days.
