- 4 chicken breasts
- 1 cup fresh spinach
- 1 cup cream cheese
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
- Toss in the fresh spinach and cook until wilted, about 2 minutes.
- Combine cream cheese, mozzarella, sautéed spinach, Italian seasoning, salt, and pepper in a mixing bowl until creamy.
- Cut a pocket into each chicken breast without slicing all the way through.
- Spoon the creamy filling into each chicken pocket.
- Sear the chicken breasts in the skillet for about 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake for 20-25 minutes until cooked through.
- Rest the chicken for a few minutes before serving.
Notes
Use toothpicks to seal chicken pockets if needed. Experiment with different cheeses or add vegetables to the filling for unique flavors.
