A rich and savory pasta salad bursting with flavor from salami, mozzarella, and fresh vegetables.
Ingredients

- 8 oz tortellini
- 4 oz salami, diced
- 4 oz mozzarella cheese, cubed
- 1 cup cherry tomatoes, halved
- 1/2 cup bell pepper, diced
- 1/4 cup red onion, diced
- 1/4 cup olives, sliced
- 1/4 cup Italian dressing
- Salt and pepper to taste
Instructions
- Cook the tortellini in a large pot of salted boiling water according to package instructions until al dente. Strain and rinse with cold water.
- In a mixing bowl, combine the cooled tortellini, diced salami, cubed mozzarella, cherry tomatoes, diced bell pepper, red onion, and olives.
- Drizzle with Italian dressing and toss until well-coated.
- Season with salt and pepper to taste.
- Serve immediately or chill for at least 30 minutes to meld the flavors.
Notes
This pasta salad can be made ahead of time and stores well in the refrigerator for up to three days. Add more dressing before serving if desired.
