Deliciously light cupcakes infused with lime and tequila, topped with a creamy lime buttercream and a sprinkle of coarse sea salt.

- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup buttermilk
- 1/4 cup tequila
- Zest of 1 lime
- Juice of 1 lime
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup coarse sea salt (for topping)
- 1 batch lime buttercream frosting
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with colorful liners.
- Cream together the softened butter and sugar until light and fluffy, about 3-5 minutes.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the buttermilk, tequila, lime zest, and lime juice until combined.
- Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Fill each cupcake liner about two-thirds full with batter.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool completely before frosting with lime buttercream.
- Sprinkle with coarse sea salt for the finishing touch.
Notes
Cupcakes can be made a day in advance. Store in an airtight container for optimal freshness. Frost just before serving.
