Description

Delicious breakfast roll-ups filled with fluffy scrambled eggs, savory sausage, and gooey cheddar cheese, all wrapped in a warm tortilla.


Ingredients

  • 8 large eggs
  • Salt and pepper to taste
  • 1 tablespoon milk
  • 1 tablespoon butter
  • 8 breakfast sausage links
  • 8 flour tortillas (8-inch size)
  • 1 cup shredded cheddar cheese
  • Cooking spray

Instructions

  1. In a bowl, whisk together the eggs, salt, pepper, and milk until frothy.
  2. Heat a non-stick skillet over medium heat, add the butter, and pour in the egg mixture. Scramble until fluffy and just set; remove from heat.
  3. In another skillet, cook the sausage links over medium heat until golden and cooked through; set aside.
  4. Lightly spray a clean skillet with cooking spray and warm it over medium heat.
  5. Lay a tortilla flat, add scrambled eggs, a sausage link, and cheese in the center.
  6. Fold the tortilla tightly around the filling and place seam-side down in the skillet.
  7. Cook for 2-3 minutes until golden and crisp; flip and repeat.
  8. Serve warm and enjoy.

Notes

These roll-ups can be prepped ahead and stored in the fridge. Reheat in a skillet or microwave before serving.
