Description

A delightful and versatile bread infused with fresh basil, sun-dried tomatoes, and mozzarella cheese, perfect as an appetizer or side dish.


Ingredients

  • 2 large eggs
  • ½ cup whole milk
  • ¼ cup olive oil
  • 2 tbsp plain Greek yogurt or sour cream
  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ¼ tsp garlic powder
  • ¾ cup shredded mozzarella cheese
  • ⅓ cup chopped sun-dried tomatoes (in oil, drained)
  • ¼ cup chopped fresh basil
  • Optional: a pinch of black pepper or red pepper flakes

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your loaf pan.
  2. Combine the eggs, milk, olive oil, and Greek yogurt in a large mixing bowl.
  3. Mix the flour, baking powder, salt, and garlic powder in another bowl.
  4. Combine the dry ingredients with the wet mixture, stirring gently.
  5. Fold in the mozzarella, sun-dried tomatoes, and fresh basil.
  6. Bake the batter in the prepared loaf pan for 40-45 minutes.
  7. Cool the bread for 10 minutes, then slice and serve.

Notes

For a dairy-free option, substitute whole milk with almond milk and mozzarella with feta.
