- 2 large eggs
- ½ cup whole milk
- ¼ cup olive oil
- 2 tbsp plain Greek yogurt or sour cream
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp salt
- ¼ tsp garlic powder
- ¾ cup shredded mozzarella cheese
- ⅓ cup chopped sun-dried tomatoes (in oil, drained)
- ¼ cup chopped fresh basil
- Optional: a pinch of black pepper or red pepper flakes
Instructions
- Preheat your oven to 350°F (175°C) and prepare your loaf pan.
- Combine the eggs, milk, olive oil, and Greek yogurt in a large mixing bowl.
- Mix the flour, baking powder, salt, and garlic powder in another bowl.
- Combine the dry ingredients with the wet mixture, stirring gently.
- Fold in the mozzarella, sun-dried tomatoes, and fresh basil.
- Bake the batter in the prepared loaf pan for 40-45 minutes.
- Cool the bread for 10 minutes, then slice and serve.
Notes
For a dairy-free option, substitute whole milk with almond milk and mozzarella with feta.
