Description

Tender slow-cooked chicken sandwiches filled with vibrant bell peppers and sweet onions, perfect for cozy gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sandwich rolls
  • Optional toppings: cheese, mayonnaise, lettuce

Instructions

  1. Heat olive oil in your slow cooker on the sauté setting.
  2. Add the chicken breasts, sliced bell pepper, onion, minced garlic, and chicken broth.
  3. Season generously with salt and pepper.
  4. Cook on low for 6-8 hours until tender.
  5. Shred the chicken in the slow cooker and mix with vegetables.
  6. Prepare the sandwich rolls by toasting them.
  7. Build the sandwich by filling each toasted roll with the chicken mixture.
  8. Add your desired toppings and serve warm.

You can prepare the chicken mixture a day in advance. For quicker cooking, use an Instant Pot.
