Description

Delicious and healthy Spinach Garlic Meatballs that are bursting with flavor, combining lean meat and nutrient-rich spinach.


Ingredients

  • 1 lb Ground Beef or Turkey
  • 2 cups Fresh Spinach, sautéed
  • 4 cloves Garlic, minced
  • 1 small Onion, finely chopped (optional)
  • 1 large Egg
  • 1 cup Breadcrumbs
  • 1/2 cup Grated Parmesan Cheese
  • 8 oz Low-Moisture Mozzarella Cubes
  • 1 tbsp Italian Seasoning
  • Salt, to taste
  • Pepper, to taste
  • 1/2 tsp Red Pepper Flakes
  • 1 tbsp Chopped Parsley

Instructions

  1. Prepare the Spinach: Heat a splash of olive oil in a skillet over medium heat. Sauté the fresh spinach until wilted, about 2-3 minutes. Set aside to cool and then chop finely.
  2. Mix Ingredients: In a large mixing bowl, combine the ground beef or turkey, sautéed spinach, minced garlic, onion (if using), egg, breadcrumbs, grated Parmesan cheese, Italian seasoning, salt, pepper, and red pepper flakes.
  3. Combine: Use your hands to mix the ingredients until just combined. Avoid overmixing, as it can yield tough meatballs.
  4. Add Cheese: Gently fold in the mozzarella cubes, ensuring they spread evenly throughout the mixture.
  5. Form Meatballs: Using your hands, scoop out around 2 tablespoons of the mixture and shape it into meatballs, about the size of a golf ball. Place them on a lined baking sheet.
  6. Cook: Heat a skillet over medium-high heat with a drizzle of olive oil. Brown the meatballs in batches, about 4-5 minutes per side, until they develop a caramelized crust.
  7. Bake: Transfer the browned meatballs back to the baking sheet and place them in a preheated oven at 375°F (190°C). Bake for 15-20 minutes or until cooked through and reach an internal temperature of 165°F (74°C).
  8. Garnish & Serve: Remove from the oven and sprinkle with freshly chopped parsley before serving.

Notes

For easy cleanup, line your baking sheet with parchment paper. You can also freeze the meatballs for up to three months.
