Description

Ingredients

  • 4 medium zucchinis
  • 2 cups shredded cooked chicken
  • 1 cup BBQ sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the center to create boats.
  3. Brush the zucchini halves with olive oil and season with salt and pepper.
  4. Mix the shredded chicken with BBQ sauce in a bowl.
  5. Fill each zucchini boat with the BBQ chicken mixture.
  6. Top each boat with a layer of shredded cheese.
  7. Place the stuffed boats on a baking sheet and bake for 20-25 minutes.
