Description

Deliciously vibrant crumb bars featuring sweet strawberries and tangy rhubarb, perfect for any occasion.


Ingredients

  • 2 cups chopped strawberries
  • 2 cups chopped rhubarb
  • 3/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 2 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a 9×13-inch baking pan by greasing it lightly or lining it with parchment paper for easy removal later.
  2. Combine the chopped strawberries, rhubarb, granulated sugar, cornstarch, and lemon juice in a mixing bowl. Toss everything together until the fruit is well-coated. Set this aside.
  3. Whisk together the all-purpose flour, rolled oats, brown sugar, ground cinnamon, baking powder, and salt in a separate bowl.
  4. Cut the cold, cubed butter into the dry ingredients using a pastry cutter or fork until you achieve a coarse, crumbly texture.
  5. Press about two-thirds of the crumb mixture firmly into the bottom of the prepared pan to form your crust.
  6. Spread the strawberry-rhubarb filling evenly over the crust.
  7. Sprinkle the remaining crumb mixture over the top of the fruit filling.
  8. Bake for 40-45 minutes, until the topping is golden brown and the filling bubbles.
  9. Cool completely in the pan before slicing into bars.

Notes

For best flavor, prepare the bars a day in advance and allow them to sit overnight in the fridge.
