- 2 cups chopped strawberries
- 2 cups chopped rhubarb
- 3/4 cup granulated sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- 2 1/2 cups all-purpose flour
- 1 cup rolled oats
- 1 cup brown sugar
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup unsalted butter, cold and cubed
Instructions
- Preheat your oven to 350°F (175°C). Prepare a 9×13-inch baking pan by greasing it lightly or lining it with parchment paper for easy removal later.
- Combine the chopped strawberries, rhubarb, granulated sugar, cornstarch, and lemon juice in a mixing bowl. Toss everything together until the fruit is well-coated. Set this aside.
- Whisk together the all-purpose flour, rolled oats, brown sugar, ground cinnamon, baking powder, and salt in a separate bowl.
- Cut the cold, cubed butter into the dry ingredients using a pastry cutter or fork until you achieve a coarse, crumbly texture.
- Press about two-thirds of the crumb mixture firmly into the bottom of the prepared pan to form your crust.
- Spread the strawberry-rhubarb filling evenly over the crust.
- Sprinkle the remaining crumb mixture over the top of the fruit filling.
- Bake for 40-45 minutes, until the topping is golden brown and the filling bubbles.
- Cool completely in the pan before slicing into bars.
Notes
For best flavor, prepare the bars a day in advance and allow them to sit overnight in the fridge.
